Chilly morning = warm oats!Posted: September 16, 2011
Brrrr! A cold front certainly came through our area yesterday. All of the sudden, it went from summer to fall!
This was the temperature when I pulled up to work this morning:
For the first time this school year, I brought warm oats for breakfast! I cooked them last night and then re-heated this morning.
Banana-walnut oats topped with banana and strawberry (and some peanut flour sauce after the photo was taken)
Now I feel all warm and fuzzy inside 🙂
Banana Walnut Oats (serves 1)
3/4 c water
1/4 c oats
1/4 c oat bran
1/2 T chia
1 packet stevia
1 tsp pure vanilla extract
1/2 tsp cinnamon
dash of salt
1/2 ripe banana
1 T walnuts
1/4 c egg whites
1/4 c almond milk
Bring water to a boil in a small saucepan. Mix dry ingredients together in a bowl and pour into the boiling water. Reduce heat to medium and quickly add in the almond milk, egg whites, and stir continuously. Mix in the rest of the ingredients and reduce heat to low. Continue to stir the mixture and let it cook for about 5 more minutes. Add more almond milk if the mixture gets too dry. Pour oats into a bowl and add your favorite toppings.
